Ah, how nice it is to feel at home a piece of summer vacation by the campfire, on the river bank.... To do this, it is not necessary to light a fire in the house and set up a tent. It is enough to cook a fishing culinary dish. In this case, it will be a sterlet ear. This food will bring gastronomic pleasure to you and your loved ones and remind you of pleasant moments spent in nature.
Clean and gut the river fish. Wash thoroughly and place in a saucepan together with the roots, pour cool water and put to boil. After an hour, pour the resulting broth through a colander into another pan.
Free the sterlet from the scales and insides, rinse, remove the mucus from the surface with a knife and wipe with a towel. Cut it and, dropping it into the prepared broth, put it on an intense heat. After boiling, reduce the flame, cook until tender. Let it brew for five minutes. Remove the fish and, folding a heated bowl, garnish with lemon slices. Pour in the broth and sprinkle with herbs.
