- There are countless recipes and write-ups on how to make something as simple, at first glance, as pea soup. It's made with ham, pork belly, and even smoked duck. Here's our suggestion: pea soup with smoked ribs for lunch. Cook a rich broth from the smoked ribs and meat bones. Sort and rinse the peas. Add the carrots, cut into large pieces. Salt everything and put it on the stove. When the water boils, skim off the foam, cover the pot, and keep cooking over low heat for about an hour and a half, until the peas break down into a purée-like mass. Finely chop the onion and sauté it in fat until golden. Then strain the broth, add the peas back in, and discard the carrots. Put it back on the heat and let the pea soup come to a boil. Add the onion, salt it, add spices, and cook for 20 minutes. When serving, add a little fresh herb to each bowl. On the side, you can serve finely cut, toasted croutons with the pea soup and smoked ribs.
