- Here's a salad that's as original as it is striking. It comes together very simply yet looks impressive—which is exactly why it's made for a party table. So, meet the "salad cake." Start by making three thin omelets in three colors: red, yellow, and green. Each one uses 2 eggs, 1 teaspoon flour, 1 tablespoon milk, and about 1 oz (30 g) grated hard cheese. That's all you need for the yellow omelet. For the red, add tomato juice to the mix; for the green, as you've probably guessed, stir in finely chopped fresh herbs. Let the finished omelets cool while you make the filling—because, yes, this is a salad "cake." Cut the bell pepper into small pieces, cover with boiling water, let sit for a minute, then drain and gently squeeze dry. Grate the 7 oz (200 g) of cheese on the fine side of a box grater, mix it with the pepper, fold in the mayonnaise, and stir well. That's the filling. Now assemble the cake: use half the filling between two of the omelet "layers" (I left the third one bare on top). Decorate however you like, chill for 2–3 hours, and enjoy!
