Thick Noodles with Meat-and-Vegetable Gravy

  • This dish takes some real effort, but the result is more than worth it. So, here's the recipe for "Kesme lagman," or thick noodles with a meat-and-vegetable gravy. Start with the simplest firm dough, the kind you'd use for dumplings. How many eggs and how much water you add is up to you — everyone has their own way. Roll it out to about 1/16 inch (2 mm) thick and cut the noodles about 1/2 inch (1 cm) wide and 12–16 inches (30–40 cm) long. Boil them in salted water, drain, and rinse under cold water to cool. You can also use store-bought noodles from a package. Now for the gravy (kayla). Cut the meat, lard, and eggplant into cubes of about 3/4 inch (2 cm). Cut the daikon, carrots, and cabbage into thin matchsticks. Slice the onion, bell pepper, and tomatoes into rings, and press the garlic through a garlic press. In the melted fat, first sauté the onion and garlic briefly. Then add the lard and meat and fry until golden brown. Add the tomatoes, bell pepper, and carrots and braise together with the meat. Once the tomatoes release their juice, add the eggplant, daikon, cabbage, and chopped celery to the pot. Immediately pour in a little of the water the noodles cooked in, and simmer over low heat for 40 minutes. Then taste for salt and add spices. Serve on a large platter (lagan). Warm the noodles by pouring boiling water over them, spread them in an even layer on the platter, and top with the gravy. Add another layer of noodles and more gravy on top. Finish with a scattering of finely chopped fresh herbs.
