Take the potatoes, peel them and cut into cubes. The smaller the better. It is better to grate carrots on a coarse grater, and cut the champignons into thin plates. We throw all this into boiling water and cook for 10 minutes, until the potatoes are ready.
We take both cheeses, having previously cut the hard cheese into pieces, and also throw them in small portions into the boiling broth, stirring it constantly with a whisk until the cheese is completely dissolved. Now cover the broth with a lid and leave it for another 3 minutes.
After that, removing the saucepan from the fire, we will crush the contents with the sole of the blender. And put it on the fire again. Bring to a boil, continuing to stir it. As soon as the soup boils, it can be removed from the heat. Puree of champignons is a recipe that is always served hot.
Just 30 minutes and a wonderful meal is ready! Pour the cheese soup with champignons, while it is still hot enough, on plates and decorate with any greens to your taste. By the way, it is good to serve it with white crusty bread! Bon appetit!
