Creamy Cheese Soup with Chicken, Rice, and Potatoes

I'm especially fond of cheese soup in all its variations — it's easy and delicious to make, and everyone loves it, family and surprise guests alike. Cheese soup with chicken holds a special place among them for me.

Cooking method
- Let's start making the creamy cheese soup. Cover the chicken with 3 quarts (3 liters) of cold water. Add salt and pepper to taste and cook until tender — about 20 minutes after it comes to a boil. Then take the chicken out and let it cool a little so it's quick and easy to cut into pieces. Add the rice to the boiling broth and cook it for about 10 minutes. While the rice cooks, finely chop the onion and grate the carrot, ideally on the fine side of the grater. Cut the peeled potatoes into cubes and add them to the broth along with the onion and carrot. Cook for 5–7 minutes, then add the chicken. Continue cooking until the potatoes are done. Once they're soft, lower the heat a little. Add the processed cheese to the soup and whisk well until the mixture is smooth. Now take it off the heat, ladle it into bowls, and garnish with fresh herbs. If you prefer a fully smooth cream soup, you can run it through a blender. Easy and delicious! Your guests will be delighted when you serve this chicken cheese soup!
