  • This fun little recipe for a great party appetizer is a big hit with my friends — stuffed lavash. Hardly a gathering goes by without fish rolled up in lavash with cheese, herbs, and garlic. People rework it, adding new ingredients to taste — pickles, say, or imitation crab sticks. But the core idea stays the same: a delicious combination of fish, grated cheese, and garlic. To liven up the party you'll need three thin Armenian lavash sheets to wrap the filling in. First, set the eggs to boil, and while they cook, prep everything else. Drain the canned fish, pick out any bones, and mash it with a fork. Grate the cheese. Combine the finely chopped herbs and pressed garlic with the mayonnaise. Cool the hard-boiled eggs and grate or chop them. Now lay the lavash sheets out on the counter and coat them well with the mayonnaise sauce. Scatter the grated cheese evenly over one sheet and cover it with a second sheet, mayonnaise side down. The next layer is mayonnaise and the canned fish. Then top with the third lavash, again spread with sauce, and sprinkle with the grated eggs. Roll the neat stack of layered lavash into a log, press it down gently, and refrigerate for about thirty minutes. The fish-and-lavash roll with herbs and garlic is ready — all that's left is to slice it with a very sharp knife into pieces about ⅝ inch (1.5 cm) wide, garnish with herbs, and… it'll vanish from the table before you know it!
