Vareniki with Potato and Bacon

You'll love these Belarusian vareniki like they're your own! Vareniki (filled dumplings) with bacon and potato are a dish that traces back to Belarus. Where I grew up — in northern Ukraine, right on the Belarusian border — we always made vareniki on Sundays, and to this day my childhood memories are tied to those Sunday potato dumplings. Now that's good eating, I'll tell you.

  • First, boil the potatoes and mash them. Fry the onion in the rendered salt pork, then stir half of it into the mashed potatoes. For the dough, stir the baking soda into the sour cream, then work that into the flour, mixing and adding water until you have a stiff dough. Roll out the dough, and use a glass to cut out rounds. Put a spoonful of filling on each round and pinch them closed into dumplings. Drop the vareniki into boiling water, stirring right away so they don't stick to the bottom, and cook for about 3 minutes. Transfer the cooked dumplings to a pot, spoon the rest of the fried onion over the top, cover with a lid, and give it a good shake to combine. And that's it — enjoy!
