- To make this exotic soup, you'll need some fairly exotic fish. But that's the deal — it's Italian cooking, and it calls for the right ingredients. Even so, and despite how it looks, I recommend everyone give this wonderful soup a try. The recipe seems complicated, but it really isn't. The heart of the dish is the fish broth, so let's start there. Into a large pot, put a quartered onion along with the fish bones and heads (gills removed). Add the celery and bay leaf and pour in 2 liters (about 8 cups) of water. Bring to a boil and skim off the foam, then keep simmering until the broth is done, about 30–40 minutes. Finely chop the rest of the onion and add it to a skillet with heated oil. Fry the onion until golden, then pour in the vinegar and cook 2 minutes more. Add the tomatoes and a little sugar, salt, and pepper. Simmer over low heat for another 15 minutes, and the sauce is ready. Meanwhile, once the broth is done, strain it through a very fine sieve into a clean pot to remove the fish bones. Stir the tomato sauce into the broth and bring the soup to a boil. Add the pieces of all the fish, a tablespoon of herbs, and the squid, and bring back to a boil. Toast the bread, break it into small pieces, and divide it among the bowls. When the soup is done, ladle it over the bread. Top each bowl with the remaining parsley, and your Adriatic fish soup is ready.
