Really tasty deep-fried meat hand pies! Deep-fried meat pies aren't exactly health food and they're pretty rich, but they're delicious — and every now and then it's worth treating yourself to something indulgent. The key is to follow a few simple deep-frying rules. Heat the oil to 340°F (170°C), but don't let it get any hotter, or it'll burn and the pies will taste bitter. Don't let it drop below 340°F either, or the pies won't fry properly — they'll just soak up oil and turn unpleasantly greasy.

- We'll make the dough with a sponge, but if you're short on time you can skip it. For the sponge, heat the water to 95°F (35°C). Add the yeast, sugar, and a couple of tablespoons of flour to the water. Mix well and leave it somewhere warm for 20 minutes — a glass container works best. Once foam forms on the surface, the sponge is ready and you can move on to the dough. For that, warm the milk to 75°F (25°C) in a large bowl. In a cup, beat the eggs with the salt — you don't need a stiff foam, just an even mixture. Pour the egg mixture into the bowl of milk, add the vegetable oil, and pour in the sponge. Stir, then add the sifted flour in batches, kneading as you go. Keep adding flour until the dough turns elastic and starts pulling away from your hands and the sides of the bowl. Once the dough is ready, put it in a bowl in a warm spot to rise for 2 hours. When it's doubled, punch it down and let it rise again. Now the dough is ready. Make the filling: use store-bought ground meat (a beef-and-pork blend), add a finely chopped onion, salt and ground black pepper to taste, and mix until smooth. Roll the dough into a rope and divide it into small balls. On a floured surface, roll each ball into a thin round, place a tablespoon of filling on one side, and pinch the dough closed to form a pie. Heat the oil in a heavy-bottomed pan to 340°F (170°C), add the pies once it's shimmering, and fry until golden on both sides. Set them on a paper towel to drain off the excess oil. Serve the pies warm, with tea or coffee. Enjoy!
