Fried Mushroom Hand Pies

These golden hand pies fill the whole kitchen with a wonderful aroma! Fried mushroom pies are delicious served with a dollop of sour cream, and paired with a side of braised vegetables they make a great dinner. Feel free to use your favorite wild mushrooms, but since supermarket button mushrooms are available to everyone year-round, that's what I used here.

    1. First, make the dough for the pies:
    • sift the flour into a bowl and add the sugar, salt, and yeast;
    • pour the warmed milk and sunflower oil into the dry ingredients and crack in the egg;
    • knead a soft, elastic dough that doesn't stick to your hands;
    • transfer the dough to a bowl, cover with plastic wrap, and let it rest in a warm spot for one hour.
    1. While the dough rises, make the filling:
    • wash the mushrooms and cut them into small pieces;
    • peel the onion and cut it into small dice;
    • sauté the mushrooms and onion in vegetable oil until the onion turns translucent;
    • season with salt and pepper to taste and stir.
    1. Divide the dough into equal pieces (you should get about 17–18), shape each piece into a round with your hands, spoon filling into the center, and pinch the edges closed to form a pie. Fry the pies in vegetable oil on both sides until golden.
  • It's best not to eat the pies piping hot, so wait until they cool a little and serve them warm.
