Step 1:
How to fry eggplants like mushrooms? Prepare all the necessary products for the recipe. You can peel the eggplant beforehand, I usually don't do this and cook the blue ones as they are.
Step 2:
Cut the eggplant into small cubes. If you have a variety of blue ones that are bitter, then soak the cubes in salt water for 15-20 minutes. Then drain the water and dry the eggplants.
Step 3:
Wash and dry the eggs. Drive them into a deep small container and whisk with a whisk or fork until smooth.
Step 4:
Send the eggplants to a deep, suitable-sized dish. Pour in the egg mass and mix well. Each piece should be covered with egg filling. Cover the bowl with plastic wrap or a lid and send it to the refrigerator for 30-60 minutes.
Step 5:
Peel the onion and garlic, rinse and dry with paper napkins. Cut the onion into small cubes, and pass the garlic through a press or chop with a knife.
Step 6:
Heat refined vegetable oil in a frying pan with a thick bottom. Pass the onion with garlic until transparent.
Step 7:
Put the eggplants in the pan. Mix everything, reduce the flame of the stove to moderate and cook the blue ones under the lid until ready. Usually it takes from 20 to 30 minutes (depends on the size of the pieces). Periodically open the lid and stir the contents of the pan.
Step 8:
At the end of cooking, salt the blue ones to taste. Pepper if desired. Make the fire to the maximum and, stirring constantly, cook until an appetizing brown crust appears (1-3 minutes will be quite enough).
Step 9:
Sprinkle the finished dish with fresh herbs, chopped finely. Green onions, parsley or dill are well suited. Ready, you can serve!
This snack is sure to appeal to all lovers of blue. And if someone else has not appreciated eggplants, then fried in this form, like mushrooms, they will definitely please everyone.
