- Fried beans aren't just a matter of tossing beans into a pan and browning them. This recipe is a bit more involved, but if you do it right you get a really tasty dish that you'd be proud to set in front of guests. So, start by heating some oil in a large skillet over low heat. Add the onion and fry it for about two minutes, until softened. Next add half of the beans along with their liquid and mash the bean-and-onion mixture with a masher until it's a smooth purée. Then, still mashing, gradually add the rest of the beans until they're puréed as well. After that, just leave the beans to fry over medium heat for 3–5 minutes, stirring so they don't stick. When the purée starts to dry out, turn off the heat, spoon it onto warmed plates, and top with grated cheese. To me this is a really tasty, savory dish that you and your guests are sure to enjoy.
