Stuffed Chicken with Fried Potato and Mushroom Filling

Cooking method

    Rinse the whole chicken and carefully bone it out, separating the meat from the bones.

    Make the marinade: in a bowl, combine 1/2 tsp paprika, 1/2 tsp curry powder, 1/2 tsp oregano, salt and red and black pepper to taste, coriander crushed in a mortar, and 4 cloves of garlic. Pour in a little vegetable oil and stir until smooth.

    Rub the marinade all over the chicken, inside and out, then seal it in a bag and refrigerate for an hour.

    Slice the mushrooms and add them to a well-heated skillet.

    To the browned mushrooms, add vegetable oil, black pepper, salt, chopped onion, and lemon juice. Cook until the onion turns translucent, stir, and turn off the heat.

    Place the chicken in a roasting pan. Stitch the opening closed with toothpicks, tie the legs together with kitchen twine, and wrap the wing tips in foil.

    Roast the chicken for 40 minutes, take it out, lay a piece of foil over the breast, and return it to the oven for another 35–40 minutes.
