- Every kind of fish is special in its own way — that's the beauty of seafood. Each one has its own quirks in the kitchen, and it pays to keep them in mind rather than ignore them. Horse mackerel is a fast-swimming fish, and because of that its flesh is nearly fat-free and considered lean and light. It's rich in the many vitamins and trace minerals our bodies need. You'll find it sold both fresh and frozen — either way, it's good for frying. Fresh is ideal, of course, but frozen works fine too. Now let's get cooking. If the mackerel is frozen, thaw it — preferably without any kitchen gadgets: just lay the fish on the counter and let it come up to room temperature. Another good option is to move it from the freezer to the fridge the night before, so it thaws by morning. 1. Gut the fish: using kitchen scissors, cut open the belly and clean out the insides. Work carefully so you don't tear the fish and it stays whole and appetizing. 2. Rinse the fish and let it dry — to save time, pat it dry with paper towels. 3. Salt the dried fish and sprinkle with lemon juice. Let it marinate for an hour. 4. Pour the flour onto a flat plate and add the ground coriander; mix. Dredge the mackerel in this mixture. 5. Peel the garlic and slice it thin. Pour vegetable oil into a skillet and add the sliced garlic. 6. Set the skillet over the heat. As the oil warms, the garlic will release its aroma. Add the fish to the fragrant oil and fry on both sides until golden; no need to cover the pan while frying. Serve the fish hot. Enjoy!
