  • For potatoes that fry up evenly and beautifully, you need a good pan — a nonstick one works, but a heavy cast-iron skillet with a thick bottom is even better. One of the keys to success is matching the amount of potatoes to the size of the pan, so you don't overcrowd it. Heat the pan well before adding the potatoes. Once it's hot, add the sliced potatoes and fry over fairly high heat, stirring constantly with a large fork, until they're crisp and cooked through.
