Fried Shoestring Potatoes
It's hard to resist something this good-looking when it's so easy to make! Fried potatoes go wonderfully with just about any meat or fish dish. I like mine with a fresh salad. Mmmm... this is probably my weakness. The flavor is just unbeatable.

Cooking method
- Wash and peel the potatoes. Cut them into thin strips — though rounds or cubes work too (halve each potato lengthwise, then cut each half lengthwise into 3–4 strips, and crosswise into 3–5 pieces). Heat a skillet with oil and add the cut potatoes. Fry over high heat at first, then, once a golden crust forms, lower the heat to medium, season with salt and pepper, and keep frying uncovered until done.
