  • I once wanted to make fried pies with onion and egg in a hurry, but I didn't have time to fuss with yeast dough, so I asked my husband to grab some ready-made yeast dough at the store. As inattentive men do, he mixed everything up — he had no idea dough comes in different types. He saw "Frozen Dough" on the package and grabbed whatever. So instead of yeast dough, I ended up with puff pastry on my counter. And I'd already made the filling — like I said, I wanted these done fast. Well, nothing for it, so I decided to make them with the puff pastry, and they turned out every bit as good. So I'd encourage you to fry pies like these, too. First I made the filling: I hard-boiled the eggs, then diced them, and chopped the green onion. I mixed it all together, added a little salt, and stirred in a bit of mayonnaise for flavor. They'd be just as tasty with regular yellow onion instead of green — just don't add it raw; sauté it in oil in a skillet first, and then you can skip the mayonnaise. Next, take the puff pastry out of the freezer and let it thaw. Gently unfold it and cut it into rectangles or rounds. Spoon the filling into the center and fold it over like a pie, pinching the seam tightly shut. Set a skillet on the stove, pour in some oil, and heat it up. Lay the pies in seam-side down, a few at a time, and fry until golden brown. Enjoy!
