Odessa-Style Breaded Fried Mullet

Not everyone has tried mullet — and that's a shame, because it's incredibly tasty and delicate! Tasty. Easy. The fish comes out wonderfully tender and juicy with this recipe, and Odessa-style breaded mullet comes together fast.

    Clean and rinse the mullet, then cut it into medium pieces. Bone out each piece.

    Coat the mullet fillets in the beaten egg.

    Fry the breaded mullet pieces in preheated vegetable oil.

  • There's a simple way to tell when the oil in your pan is hot enough. Dip in a wooden spatula; if bubbles gather around it, you're ready to start frying.
  • Use an oil with a high smoke point for frying! All oils are only healthy up to a certain temperature — the smoke point — beyond which the oil starts to burn and forms toxic compounds, including carcinogens. Unrefined oils, with rare exceptions, have a low smoke point; they're full of unfiltered organic particles that quickly begin to scorch. Refined oils hold up better to heat and have a higher smoke point. If you're cooking in the oven, on the stovetop, or on the grill, make sure you're using a high-smoke-point oil. The most common ones are refined sunflower, olive, and grapeseed oil.
