Fluffy Kefir Pancakes (No Yeast)
Super tasty, super fast, super easy — the best breakfast! These yeast-free pancakes turn out wonderfully fluffy thanks to the baking soda reacting with warm kefir. They come together in about 20 minutes, tops. You can fry the batter right after mixing everything together. (Kefir is a tangy cultured-milk drink; buttermilk is a good substitute.)

Step 1:
How do you make yeast-free kefir pancakes? Gather your ingredients. Warm the kefir until it's lukewarm and stir in the baking soda. Let it sit for 3–5 minutes so the soda can react with the kefir — that's what makes the pancakes fluffy.

In a separate bowl, combine the egg with the sugar.

Then add the vegetable oil and a pinch of vanilla. Pour in the kefir-and-soda mixture and add the sifted flour. Always sift the flour — it aerates it and makes the finished pancakes lighter.

Mix the batter well until smooth, with no lumps of flour — a hand mixer works well. You may need a little more or less flour than listed, so go by the consistency: the finished batter should be fairly thick.

Pour a little vegetable oil into a hot skillet and spoon in the batter to form the pancakes. Fry them for 1–2 minutes over low heat.

Then flip them with a spatula and fry the other side the same way. Keep the heat low — the pancakes need time to bake through inside without burning outside.

Move the finished pancakes from the hot pan to a plate. To blot off any excess oil, set them on paper towels. Delicious, fluffy pancakes for tea are ready. Enjoy!
- People often think you can only get fluffy pancakes with yeast. Not so — with a little baking soda they come out just as good. For a new twist, stir grated apple or grated cooked carrot into the batter, or drop a piece of apple or a few cherries right onto each pancake in the pan. Serve them with condensed milk, sour cream, jam, or a berry topping. Make a batch for the family on a Sunday morning or just as an anytime snack. Kids especially love these — they come out so fluffy they're almost like little buns cooked in a pan. By the way, kefir that's had time to sit works best; the soda ferments well in it, and that makes the batter airy.
