    How to fry pancakes on soda and without yeast? Prepare all the products. Kefir take any percentage of fat content, but the pancakes are tastier, of course, they will turn out on a fatter kefir. I prefer to take 1-2 grades of wheat flour. This flour has a slightly creamy color and, in my opinion, is great for all types of similar baking. But you choose the flour as you wish.

    Preheat the kefir so that it is slightly "curdled". You can heat it on the stove or in the microwave. Pour the kefir into a deep bowl, where you will knead the dough for pancakes. Immediately take more dishes, because the mass will increase greatly.

    Add soda to kefir and mix well.

    Pour sugar into kefir and add a little salt. If desired, especially if you cook for children, you can add some flavors: a teaspoon of vanilla sugar or a pinch of vanilla, ground cinnamon will also be appropriate here.

    Mix all the products. Kefir will begin to bubble, and the mass will increase significantly in volume.

    Add flour in parts. Please note that you may take more or less flour than I do. Be guided by the consistency of the dough.

    For confectionery, I always advise sifting flour. During sifting, the flour is saturated with oxygen, which means that the finished product will turn out to be more airy. Always sift the flour!

    Mix the dough well so that there are no lumps. The dough will be quite thick, the consistency is like fatty sour cream.

    Prepare the pan. For pancakes and fritters, I prefer a cast-iron frying pan, but you can take a ceramic or any other, but it is desirable that it be non-stick coated. Pour vegetable oil into the pan and heat it well. Spoon a little dough into the pan and fry over low heat for about 3-5 minutes, then gently turn over.

    Fry the pancakes on the other side for about 2-3 minutes. By the way, it is not necessary to pour the oil into the pan, you can simply lubricate it with a brush with a small amount of oil. Serve pancakes with sour cream, condensed milk or jam. Bon appetit!

Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
