These little mushrooms make a fantastic, versatile appetizer that comes together with almost no effort and hardly any time.

    To grill mushrooms over charcoal, start with good-quality, fresh button mushrooms, medium to large in size. I picked mine out at the supermarket and went for the biggest ones. Skip mushrooms with long stems — they'll get in the way. You'll also need vegetable oil (I use unrefined corn oil), salt, and any spices you like, especially garlic powder.

    Rinse the mushrooms well, trim the end of each stem with a sharp knife, and cut away any dark, bruised spots.

    Drizzle the mushrooms with vegetable oil, sprinkle with salt, and dust evenly with garlic powder. With clean hands, work the oil, salt, and garlic over the whole surface of every mushroom so that each one is coated all over.

    Arrange the prepared mushrooms on the grill grate over the coals. The heat should be a little above medium, with no open flames licking up. Grill the mushrooms until they darken and brown to your liking, first on one side, then the other. I like grilling mushrooms on the grate, but you can also use skewers. If you do, thread them on carefully so they don't split.

    The grilled mushrooms are ready! Take them off the grill and bring them to the table. These mushrooms are great hot, at room temperature, and even chilled.

    Serve the finished grilled mushrooms with fresh herbs and any sauces or vegetable salads you like.

  • Besides garlic powder, try seasoning the mushrooms with other spices. The perfect one is oregano. It's usually part of Italian or Provençal herb blends, so you can reach for those. Don't add too much — the flavor is quite strong. Definitely try the mushrooms with oregano; you'll love it. It gives them a bit of a pizza-like taste.
