Cooking method
- Cut each tomato almost down to the stem, marking out four sections. Cut the brynza into thin pieces, trimming them to fit as "petals" and rounding the edges. Tuck the cheese "petals" into the cuts in the tomato. In the center of the tomato, make 4 more cuts between the large "petals" and insert cheese into those too. Cut the ham (cured fish or sausage) into thin slices, then into matchsticks. These will be the stamens. In the center of the tomato, poke holes with a knife and insert the "stamens." Between them, a "pistil" of cucumber. Also cut leaves out of cucumber. Arrange the finished flowers on a dish and sprinkle with salt and lemon pepper. Place the cucumber leaves around them, with "buds" of tomato skin between them.
