Creamy Mushroom Gravy with Sour Cream

You can make this gravy with any mushrooms, even frozen ones (just thaw them first and drain off the excess liquid). Use a refined, neutral oil.

    Peel the onion and cut it into small dice. How fine you go is up to you — some people like to feel distinct pieces of onion and mushroom in the gravy, while others prefer a smoother, more sauce-like texture.

    Heat the vegetable oil in a skillet and add the onion. Again, use a refined oil so it doesn't burn.

    Sauté the onion until golden — about 5–7 minutes over medium heat.

    Meanwhile, clean the mushrooms. Take your time to rinse off any grit, which often hides under the caps. Pat the mushrooms dry and cut them into dice — again, whatever size you like.

    Season with a little salt — it helps draw excess moisture out of the mushrooms. Sauté over medium heat for about 7–10 minutes, until the liquid has cooked off and the mushrooms are golden.

    Meanwhile, whisk the flour into 150 ml (about ⅔ cup) of water. Stir well so there are no lumps. The flour thickens the gravy; you can use cornstarch instead if you prefer.

    At this point you can stir in your favorite seasonings — some like ground black pepper, others prefer ground garlic. Go with your taste. Simmer for 3–4 minutes; the gravy will thicken quickly.
