- They say this recipe was a favorite of the last Russian Emperor, Nicholas II, who preferred cognac above all other alcoholic drinks. I'm not talking about black caviar, which most of us still can't afford even on the biggest holidays (Nicholas II, being royalty, could afford to eat black caviar by the heaping spoonful, but he made do with a slice of lemon piled high with black caviar — that was his favorite cognac chaser). I'm talking about a far more democratic and readily available food: cheese, and any hard variety at that. To start, slice the cheese into thin sheets with a cheese slicer. Wash the lemon well, peel and all — don't remove the peel. Slice it as thinly as you can into rounds. If you like, dip the lemon in granulated sugar on both sides. Lay the lemons on a plate and top them with the cheese slices. Then take a long wooden skewer, fold a lemon round in half with your fingers, and elegantly spear it onto the skewer together with the cheese. It should look beautiful. By the way, this is traditional French fare — France being the home of fine cognacs and delicious cheeses.
