Sweet Mashed Cranberries
This recipe lets you keep all the vitamins in the berries! Cranberries mashed with sugar are an excellent source of vitamins! You can use any berries you have on hand: blueberries, lingonberries, sea buckthorn. There's probably no need to dwell on how good this wonderful berry is for you in a recipe section. Still, cranberries deserve the highest praise and top honors in the "Vitamin Powerhouse" category. They boost the immune system, help restore your health, and lift your mood with their bright color. I just want to share my way of putting up cranberries. On their own you can't eat too many of them, but cranberries with sugar are simply wonderful in tea, in fruit drinks, and in other beverages.

Cooking method
- I used to simply sort the berries, wash them, and mash them with a wooden masher while gradually adding sugar. It had to be wooden, because with a metal masher the large amount of acids in cranberries reacts with the metal, forming new acids that are anything but good for the human body. Oh, this is turning into a chemistry lesson! After mashing the cranberries with sugar, I'd put them in jars and into the fridge. Now I've refined the method a bit. I use frozen cranberries. Scientists say the taiga is sterile, and cranberries contain a natural preservative — benzoic acid. This natural preservative prevents all kinds of bacteria from developing and stops fermentation from starting. So there's no point in washing the cranberries. That's why I don't wash them — I just put them straight through a meat grinder. While frozen, the acids don't react with the metal. After that I cover them with sugar, put them in jars, and into the fridge. The ratio of sugar to cranberries: for every 1 kilogram of cranberries I use 1.5 kilograms of sugar. A vitamin-rich mixture like this makes a wonderful base for tea.
