Step 1:
How to make draniki with meat? First, prepare the meat filling. How to make the filling? Peel the onion, divide it in half and chop one half in any way (with a knife, grater, blender). Add onion, salt and ground black pepper to the minced meat, knead it well. Cover the board or plate with plastic wrap. Make 10 small tortillas out of minced meat and put them on a food film. Put the cutlets prepared in this way in the refrigerator.
Step 2:
Prepare the potato dough. Wash and peel the potatoes well. Grate the potatoes and half of the remaining onion on a fine grater. Transfer the grated mass into one deep container, add egg, wheat flour and salt to it. Mix all the ingredients thoroughly. You should get a fairly thick dough that does not spread, but keeps its shape.
Step 3:
Pour vegetable oil into the frying pan and put it on the fire. When the pan is warmed up, use a tablespoon to lay out the potato mass in the form of pancakes.
Step 4:
Then immediately put the meat patties on top of the potatoes. Close them with potato mass, so the minced pork will be completely inside the draniki. Fry the draniki with meat over medium heat so that during their roasting the meat filling has completely had time to cook and does not turn out to be raw.
Step 5:
Fry the pancakes until golden brown, then gently turn them over and fry on the other side, also until golden brown. During the cooking process, potato pancakes can be turned over several times and fried to the desired color. Remove the finished draniki from the pan on a paper towel, which will absorb excess fat. Thus, prepare draniki from the whole dough. Serve the draniki on the table hot with sour cream. Enjoy your meal!
Draniki is a very popular dish of Belarusian cuisine, which has won the love of millions of people, not only because they are easy to prepare and require a minimum of ingredients, but also because they are insanely delicious. Today there is a huge variety of them with different fillings and different interpretations of cooking. This time I made pancakes with meat, they turned out delicious and juicy, but I understand that I give my preference to the classic version of cooking this amazing dish.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.
Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
