Kimbap in Korean

Original, spicy, unusual, very tasty! Kimbap is a variant of Japanese rolls in Korean. They are more satisfying, as an omelet is added to the filling. Rice is seasoned with sesame oil instead of the classic dressing of vinegar, sugar and salt.

Step-by-step cooking

Cooking time: 40 min
  1. Step 1:

    Step 1.

How to make kimbap in Korean? Prepare the products. Despite the exotic nature of the recipe, the ingredients for the rolls will need the simplest. Take special rice for sushi. If you don't have one, then a regular round one will do.

  2. Step 2:

    Step 2.

Boil the rice for the rolls. How to cook rice? First, rinse it thoroughly in several waters until transparent.

  3. Step 3:

    Step 3.

Then put the rice to cook on a small fire, adding water in a ratio of 1:2 — two glasses of water per cup of rice. The rice will be ready when all the liquid is absorbed into it, it usually takes 15-20 minutes.

  4. Step 4:

    Step 4.

While the rice is cooking, prepare an omelet. How to make an omelet? Break the eggs into a deep dish, add a little water and salt to taste. Beat the eggs well with a fork or whisk and pour into a preheated frying pan with a small amount of vegetable oil. Fry the omelet on low heat under the lid.

  5. Step 5:

    Step 5.

While the omelet is frying, cut the crab sticks in half lengthwise and also cut the cucumbers into strips. The finished omelet is also cut into strips about 2 cm wide.

  6. Step 6:

    Step 6.

When the rice is cooked and slightly cooled, season it with sesame oil and mix thoroughly. And leave to cool to a temperature of 38-40 degrees.

  7. Step 7:

    Step 7.

When the rice has cooled down, take a bamboo mat, put a nori leaf on it with the shiny side down, then spread the rice evenly with a thin layer over the entire sheet. A glass of dry rice should make 4 rolls.

  8. Step 8:

    Step 8.

Spread the filling evenly closer to the bottom edge.

  9. Step 9:

    Step 9.

And carefully, starting from the bottom edge, wrap the roll, sealing it with a bamboo mat along the way. Then cut your roll into portions. I got 8 pieces. Serve with soy sauce. Bon appetit!

Kimbap is not much different from its Japanese counterparts. The main difference is in dressing rice with sesame oil instead of vinegar, sugar and salt. And the fillings are very diverse — this is an egg omelet, and baked chicken, and fried sausage, and crab sticks, and fried vegetables, and raw vegetables, as well as pickled vegetables, meat and fish.
In this recipe, I made a kimbap with crab sticks, cucumbers and an omelet. You can also make Korean rolls with this filling: 1. carrots marinated in vinegar, baked chicken, cucumber and omelet; 2. smoked sausages, pickled carrots, bell pepper and omelet. Instead of carrots, you can add pickled daikon. There are many other options.
Korean rolls are usually served with a sauce mixed with soy sauce 6 tbsp.l., sweet soy sauce 1 tbsp.l. (can be replaced with honey to taste), chili sauce 1 tsp. and sesame oil 0.5 tsp.

Be sure to wash the eggs before use, as even the seemingly clean shell may contain harmful bacteria. It is best to use food detergents and a brush.

How to buy crab sticks correctly? Be sure to pay attention to the expiration date of the product. Surimi meat (minced white fish) should appear in the list of ingredients in the first place. Important! Do not buy the product if there is frost on it. This is a sign of repeated freezing. Fresh sticks should be free of gray and yellow spots, elastic and slightly moist. If the product is sticky, it means it is spoiled.
