- In a roomy bowl, stir the kefir together with the salt, then add the pepper blend and the mustard.
- Rinse the beef, pat it dry, and cut it into chunks.
- Add the meat to the marinade and refrigerate.
- After an hour (or two, if you have the time), thread the meat onto skewers.
- Grill the kebab over good, hot coals, turning the skewers every 15 minutes. If flames flare up, put them out right away with a splash of water, or the meat will char.
