Puff Pastry Mushroom Pie
Quick, easy, and yet so delicious! The great thing about this puff pastry mushroom pie is how simple it is to make. Using store-bought pastry cuts the prep time way down, so even a beginner can bake it.

Step 1:
How do you make a puff pastry mushroom pie? Gather your ingredients. Use store-bought or homemade puff pastry. Any mushrooms work — button mushrooms like mine, oyster mushrooms, or wild ones. For the cheese, choose one that melts well and is good quality, with no vegetable-oil fillers.

Step 2:
Rinse the mushrooms well and cut away any dark or damaged spots. Cut them into small pieces — thin slices or small cubes, whichever you prefer.

Heat the vegetable oil in a skillet over medium heat and add the peeled, finely chopped onion. Cook it briefly, then add the chopped mushrooms and stir. Fry the mushrooms and onion over high heat, stirring often. Season with salt and spices to taste. Cook until all the liquid has evaporated and the mushrooms are browned.

If your puff pastry is frozen, thaw it and unfold it. How you assemble the pie depends on how the pastry is cut. If it's a single sheet, just unfold it; if it's several separate sheets, put the filling on one and cover it with another, keeping them flat.

Spread the mushroom-and-onion filling over one half of the pastry and sprinkle with the coarsely grated cheese. Don't spread the filling all the way to the edges — leave a little room for sealing.

Cover the filling with the other half of the pastry and pinch the edges together tightly. You can do this with your fingers or crimp with a fork.

Brush the top of the pie with a little vegetable oil and bake in an oven preheated to 400°F (200°C) for 20–25 minutes. The pie should puff up noticeably and turn golden. Take the finished pie out of the oven, let it cool a little, and serve. Enjoy!
- Add a little ground black pepper or Italian herbs to the mushroom filling to make your pie even more flavorful and interesting.
- Besides store-bought pastry, you can use your own homemade dough. Look for a homemade puff pastry recipe for this bake.
- You can swap the button mushrooms for porcini or slippery jacks, but keep in mind the difference in prep steps and cooking time. Dried mushrooms work too (you'll need 5–6 times less than fresh) — just rinse them and soak them before cooking, about 2–3 hours.
