  • For lula kebab that comes out juicy and tasty, the ideal ratio is 80% beef to 20% pork — and it's best to use fattier pork so the kebabs stay juicy and tender. Start by mixing the ground beef and pork together. Peel, rinse, and dry the onion, then dice it finely. Feel free to add more onion to taste; it helps keep the meat juicy and soft. Rinse the fresh cilantro under running water and dry it on a paper towel, then trim off the tough stems and finely chop the leaves. Put the chopped onion and cilantro in a mortar, add the garlic powder and paprika, and pound everything until the onion releases its juices and you have a purée-like paste. Add this onion-herb-spice paste to the bowl of meat and knead thoroughly so the seasonings are evenly distributed. Cover the meat with plastic wrap and let it rest a couple of hours to marinate and absorb the flavors, stirring it by hand a couple of times during that time and re-covering it. Once it's rested, season with salt and freshly ground black pepper to taste. Knead the meat well again and give it a few slaps to work it — this makes it stickier and firmer, so it holds together easily on the skewer. Now form the kebabs: when the coals are hot, mold the meat onto skewers in the shape of sausages no more than 1 inch (2–3 cm) thick. Wetting your hands with cold water makes shaping easier. The kebabs cook fairly quickly over gentle heat. Serve with vegetables, fresh herbs, and lavash flatbread. Enjoy!
