Quick Lazy Belyashi (Kefir-Batter Meat Fritters)

A wonderful, hearty little dish! Traditional belyashi are yeast-dough pockets stuffed with meat and deep-fried — this "lazy" version skips the dough-kneading entirely. You spoon a quick kefir batter into a hot skillet, tuck seasoned ground meat inside, and pan-fry until golden. They come together fast and taste every bit as satisfying as the original.

    Start by warming the kefir until it's just lukewarm. Stir in the baking soda and mix thoroughly, then add the salt and sugar and let it sit for a minute. Begin working in the flour a little at a time, stirring constantly, until the batter reaches the consistency of pancake batter.

    Pour sunflower or olive oil into a skillet, about 1/3 inch (up to 1 cm) deep, and heat it well over medium-high. Working quickly, drop a spoonful of batter into the oil, add a bit of the seasoned ground meat on top, then cover with another spoonful of batter. Leave a small gap between the two layers of batter so the fritter cooks through.
