Pan-Fried Egg and Cheese Sandwiches
A quick and tasty option for breakfast or a snack! Lots of people love these pan-fried egg and cheese sandwiches with a cup of coffee or tea in the morning. They come together very simply and quickly, take hardly any time, and the ingredients are always waiting in the fridge — a real plus for busy working people. Beyond breakfast, they make a hearty, easy snack between meals, or a nice addition to one.

Step 1:
Gather the ingredients for the sandwiches. Any bread works here — white, dark, or a loaf, whatever you prefer. It doesn't have to be fresh; day-old, slightly dried bread is actually ideal, since it won't crumble when you slice it.

Cut the bread into slices no more than about ½ inch (1 cm) thick. If the slices are too wide, cut them into smaller pieces.

Use any hard cheese you like. Grate it on the fine side of a grater. Crack the egg into a bowl — you can scale the amounts up depending on how many servings you want. Add the grated cheese.

Season with salt and ground black pepper to taste.

Using a fork or a hand whisk, mix everything into a smooth, even spread.

If you like, stir some finely chopped fresh herbs or green onion right into the egg-and-cheese mixture — they'll make the sandwiches more fragrant and juicy. Mix again.

Pour the vegetable oil into a skillet and heat it over medium heat. Lay the bread slices in the hot oil and fry until golden on both sides. Quickly lift the toasted slices out one at a time and spread the egg-and-cheese mixture evenly over each one.

Return the slices to the skillet, spread-side down. Fry the sandwiches over medium heat for two minutes uncovered, then cover the pan with a lid and cook for about 5 minutes more.
