- For the best grilled peppers, start with good-quality produce. A mix of colors makes the dish brighter and more fun. Go for thick, fleshy peppers. 2. Rinse the peppers under running water. Cut large ones in half and remove the core and seeds; medium and small peppers can stay whole. 3. Set the peppers on a grill grate and place it over the coals. The key is to grill over hot, glowing coals — never over open flames. 4. Grill the peppers for about 3–5 minutes per side, until done. If you're using different varieties, they may cook at different rates — some faster, some slower — so keep an eye on them and pull the softer, more tender ones off in time. 5. Make the dressing: pour the lemon juice and soy sauce into a small bowl, add the olive oil, and stir. If you like, add some minced garlic. 6. Drizzle the dressing over the peppers while they're still warm and let them sit for a couple of minutes to soak it up. It's best to stick with olive oil here rather than another vegetable oil — it suits this dish best.
