Cooking method

    Take a deep bowl that's easy to mix batter in. Crack in the egg, add the sugar, salt, and baking soda, and beat with a whisk or mixer.

    Add the flour gradually, stirring constantly. Sifting the flour will make the pancakes lighter. Finally, stir in the vegetable oil. The batter is ready — it shouldn't be too thin, so make it a bit thicker than usual.

    Preheat the pancake griddle — it takes about 3–4 minutes to heat up.

    Fill the ladle to the line, then carefully pour the batter into the center of each round well on the griddle.

    Use the bottom of the ladle to spread the batter out to the edges of the well, so you get a nice even pancake.

    Fill all the wells of the griddle with batter.

    The first batch takes a little longer. Check for doneness by lifting the edge of a pancake with a spatula. Once one side is golden, flip it and cook until done.

    Lift the finished pancakes off with a spatula and brush them with butter. These little pancakes make an elegant, appetizing appetizer topped with red caviar for a special occasion — and sour cream or your favorite jam is a wonderful match too. Enjoy!
