Flourless Semolina Syrniki
A tasty, filling, wholesome treat for grown-ups and kids alike! Syrniki are one of the best breakfast options around. They're made from farmer cheese with all kinds of add-ins — semolina, flour, or nothing at all. I'll note that semolina syrniki come out denser and drier than the flour version, but they're more filling.

Step 1:
Gather your ingredients. Use any fat level of farmer cheese you like — for kids, of course, go with a natural full-fat one. Either way, these syrniki won't be a light diet food, thanks to the semolina. If your cheese is grainy and dry, buzz it in a blender or press it through a sieve.

Step 2:
Put the farmer cheese in a deep bowl and crack in the eggs. Add the sugar, a pinch of salt, and the vanilla. Adjust the sugar up or down to taste. Beyond these ingredients, you can fold dried fruit, fresh fruit, or berries into the batter.

Blend or beat everything until the cheese mixture is smooth. It should be on the runny side. If it's quite thick, stir in a couple of tablespoons of sour cream so the semolina can swell properly — otherwise the syrniki will turn out hard and dry.

Stir the semolina into the mixture, mixing well so no dry grains remain, and let it stand 20 minutes at room temperature for the semolina to swell. By then the batter should have thickened.

Scatter some semolina on a clean work surface or plate. With hands dampened in cold water, shape the mixture into small patties or pucks and coat them in the semolina on all sides.

Pour the vegetable oil into a skillet and heat it. Set the syrniki in the pan. Fry over medium heat on both sides until lightly golden. Then lower the heat to its lowest setting, cover the pan, and cook another 10 minutes. Transfer the syrniki to a paper towel to drain off the excess oil. Serve with jam, preserves, sweetened condensed milk, or sour cream, as you like. Enjoy!
