Oyster Mushrooms in Sour Cream

Oyster mushrooms in sour cream — a quick skillet recipe. Made this way, they come out wonderfully flavorful. You'll find these mushrooms in any grocery store, and they're so inexpensive you can cook them without denting the grocery budget.     Cut the oyster mushrooms into strips. There's no need to go too fine, since mushrooms shrink as they cook. I used two clusters of oyster mushrooms on the stem — that came to right around a pound.

    Peel the onion and slice it into thin half-moons. Feel free to use plenty — it adds moisture and flavor to the dish.

    Pour the vegetable oil into a heated skillet, let it warm for a moment, and add the onion. If you brown the mushrooms first, they'll release their liquid and the onion will end up steamed rather than sautéed, so start with the onion. Cook over medium heat for 7–10 minutes, stirring now and then, until it softens and turns juicy.

    Add the mushrooms and stir everything together well. Lower the heat a little; I didn't cover the pan. Cook down for 20 minutes.

    The mushrooms will give off liquid that then cooks away; once it does (right around the 20-minute mark), season with salt and ground black pepper. I like to use whole allspice berries ground fresh in a mill — it makes for a more fragrant result. Season and stir.

    Stir in a good-quality sour cream. I picked one labeled as made from real milk — it didn't curdle, and it held up nicely without spoiling the dish.

    Stir everything together well with a wooden spatula or spoon. Cover the pan and simmer another 5 minutes.

    Before turning off the heat, taste again — you may need a bit more salt and pepper, since the sour cream mellows the flavor. If you add more, simmer another 3 minutes, then turn it off. Sprinkle with green onion or other fresh herbs to serve.
