Puff Pastry Pockets with Chicken, Cheese, and Potato

    How do you make puff pastry pockets with chicken, cheese, and potato in the oven? Start by gathering your ingredients. Take the puff pastry out of the freezer ahead of time so it has a chance to thaw and come to room temperature. Peel the potatoes and rinse off any dirt.

    Cut the chicken breast and peeled potatoes into small cubes. Add a little vegetable oil to a hot skillet and add the potatoes and chicken. Fry over low heat for 7–8 minutes.

    Peel the onions, rinse, and finely chop. Add the chopped onion to the skillet and fry everything together for another 2–3 minutes. Season with salt and spices to taste. Let the filling cool a bit. If you spoon hot filling onto the pastry, the dough underneath softens a lot and becomes hard to move onto the baking sheet.

    Roll out the puff pastry a little and cut it into squares. Spoon a little filling into the center of each and add some grated cheese. Bring the corners of the dough up to the center and pinch the edges, leaving a few small gaps for steam to escape.

    Place the pockets on a parchment-lined baking sheet. Brush the top of each one with egg yolk, and sprinkle with sesame or poppy seeds if you like. Bake in an oven preheated to 350°F (180°C) for 20–25 minutes.
