Step-by-step cooking
Step 1:
To prepare ayran, you will need natural cold yogurt, cold mineral water, salt, herbs (I only have parsley, but you can also dill, cilantro, and any other fresh herbs).
Step 2:
Chop the greens in any way possible (with a blender or finely chopped). The smaller the chopped greens, the faster it will give its flavor to ayran.
Step 3:
Pour the yogurt into the blender bowl, add water there and whisk everything until smooth.
Step 4:
Next, add the chopped herbs and salt (the amount of salt varies according to taste).
Step 5:
Beat the mixture thoroughly. We taste it, if something is missing (greens, salt, water) - add and beat again.
Step 6:
Ayran is ready. It is recommended to drink it cold. This drink is prepared just before it is drunk. If it stands for a long time, then the water will begin to peel off.
The whole Azerbaijani cuisine, almost any of its culinary dishes is saturated with spices and herbs. And not just food! In our family, everyone loves homemade ayran – a nutritious and very popular soft drink not only in the Caucasus. It is especially good to drink on hot summer days.
Ayran looks very pretty in transparent glasses, on a tray sprinkled with crushed ice. It is worth remembering that this drink should be consumed immediately after cooking, since water flakes off quickly in it, and it loses its taste qualities.
