Fluffy Kefir Pancakes (Oladyi)
Delicious, fluffy, fragrant little pancakes for teatime! Lots of people love a quick, tasty treat like these oladyi (thick kefir fritters), especially the kids. Home cooks love how simple and fast they are — and that they're a great way to use up kefir that's a little past its prime. In fact, soured kefir is the best base for tender oladyi: because fermentation has already started, the pancakes come out incredibly fluffy even without any yeast.

Step 1:
Gather the ingredients from the list. Take everything out of the fridge ahead of time so it can come to room temperature.

Crack the eggs into a bowl and add the salt and sugar. Whisk with a whisk or hand mixer until smooth and even.

Pour the kefir into the egg mixture and stir to combine.

Sift the flour — do it a couple of times to aerate it well, which makes the pancakes even fluffier. Add the flour to the liquid and mix with a spoon, mixer, or blender until no lumps remain. It's best to add the flour in batches so you can keep an eye on the batter's consistency.

The batter should be a little thicker than sour cream, so you may need slightly more or less flour depending on the brand. Add the baking soda and stir. Let the batter rest on the counter for 15 minutes — bubbles should appear on the surface and it should rise a little. Meanwhile, pour some vegetable oil into a skillet and heat it up.

Step 6:
Spoon the batter into the skillet with a tablespoon. Fry the pancakes over medium heat. Once golden on the bottom, flip and fry the other side until golden too. Then cover the skillet with a lid and cook a few more minutes so the centers bake through. If your skillet is nonstick, you only need oil for the first batch and can fry the rest without it for a lighter treat.

Serve the pancakes with sour cream or jam, if you like. Enjoy!
