Step 1:
Prepare the ingredients according to the list. In a deep bowl, beat chicken eggs, add sugar, salt, pour kefir and vegetable oil. To get the best result, all the products stored in the refrigerator must be removed in advance so that they are of the same temperature. Kefir can be used of any fat content, but not less than 2.5%, and not necessarily fresh, yesterday's slightly sour product will do.
Step 2:
Beat the ingredients with a mixer, blender or hand whisk until a homogeneous mixture is obtained, the loose ones should completely dissolve, and the egg white should disperse.
Step 3:
Pour the sifted wheat flour into the liquid mixture and mix again, the dough should turn out to be thick as sour cream in consistency. Flour must be sifted to clean the product from foreign objects (wool, garbage), as well as to saturate the flour with oxygen, which, in turn, affects the quality of products made from flour.
Step 4:
In a glass of boiling water, dissolve the soda and pour the prepared mixture into a bowl with a dough preparation, immediately mix the dough intensively. It's okay if there are lumps left in the dough, they will disperse later. We leave the dough to "rest" for half an hour at room temperature. The dough has become similar in consistency to an ordinary pancake.
Step 5:
The dough has "rested", a large number of bubbles should form on its surface, mix it again so that all the lumps of flour disappear, and proceed to frying pancakes.
Step 6:
For the first pancake, pour vegetable oil into the pan, warm up and fry the pancake until it is ruddy on both sides. In the future, you can not add oil if the frying pan is non-stick coated. Bon appetit!
Such pancakes can be served with jam, sour cream or condensed milk. If we use them for stuffing unsweetened fillings (mushrooms, chicken, cheese and others), then the amount of sugar should be reduced during the preparation of the dough.
