  • Start with the pizza dough: warm the milk to about 105°F (40°C), then stir in the yeast and sugar. Mix well and set in a warm spot for 15 minutes — the yeast will activate and foam will form on the surface. In a separate bowl, crack in the eggs, pour in the oil, add the yeast mixture, and stir. Sift in the flour, add salt, and knead into a smooth, supple dough. Shape it into a ball, set it in the bottom of a bowl, cover with plastic wrap, and leave in a warm place for 45 minutes, until doubled in size. Meanwhile, prep the toppings: rinse the chicken breast, pat it dry with paper towels, and cut it into medium cubes; slice the sausage into rounds (halve the rounds if it's thick); cut the bacon into strips; finely dice the onion; and grate the cheese on the coarse side of a box grater. Set a skillet over medium heat and add the bacon. Fry until browned and the fat has rendered. Add the chicken pieces, sausage rounds, and chopped onion, and fry until browned, about 10 minutes. Add the shrimp and cook everything together, stirring, for 3–5 minutes, then transfer the mixture to a separate ceramic or glass container. Back to the dough: once it has risen, roll it out into a sheet about ⅛ inch (3–4 mm) thick and lay it on a parchment-lined baking sheet. Spread it with the tomato sauce. Top with the meat-and-shrimp mixture, season with salt and pepper to taste, then scatter the cheese over everything. Bake in an oven preheated to 350°F (180°C) for 20 minutes. Sprinkle the finished pizza with finely chopped fresh herbs and serve while it's still hot!
