- Any cheese works as long as it's a firm variety. Grate it. Rinse the herbs — dill, parsley, cilantro, and green onion — well in cold water, then shake the bunches over the sink to shed excess moisture. Lay the herbs on a cutting board and chop them very fine. Set a skillet over the heat and add a little vegetable oil. Take a sheet of Armenian lavash, cut it in half, and spread the herbs over each half. Sprinkle grated cheese over the herbs. Roll each piece of lavash into a wrap, tucking in the edges. Set it on the hot skillet and fry on all sides, about a minute per side. You should end up with six wraps. Arrange the finished brtuch on a plate and serve. This dish is best enjoyed hot. Enjoy!
