Meatballs in Sour Cream–Tomato Sauce in a Slow Cooker
Delicious, tender meatballs made right in the slow cooker! Meatballs in sauce are a tasty, filling dish that kids and grown-ups both love. You can make them with chicken, beef, pork, or a mix. With a slow cooker on the counter, this dish is easier and faster than ever — that's exactly how we'll make it today. And meatballs are great served with a dollop of sour cream!

Step 1:
Gather your ingredients.

Rinse the rice well in several changes of water and put it on to cook. Use a 1:3 rice-to-water ratio. Cook it until just shy of done.

If you already have ground meat, skip this step. If you're working with a whole breast like I am, grind it through a meat grinder along with the onion.

Stir the ground meat until well combined.

Step 5:
Let the parcooked rice cool.

Step 6:
Add the rice to the ground meat.

Then add the raw egg and season with salt and pepper to taste. Add your favorite spices and seasonings. Mix everything together well.

With hands dampened in water, shape the meatballs, a little larger than an egg.

Heat the vegetable oil in a skillet and lightly brown the meatballs — just enough for them to firm up a bit.

Step 10:
Transfer the browned meatballs to the slow cooker bowl.

Step 11:
Make the sauce. In a bowl, whisk together the sour cream, tomato sauce, and water. My tomato sauce is homemade. If you're using concentrated tomato paste, 2 tablespoons is plenty.

Pour the sauce over the meatballs.

Set the bowl in the slow cooker, close the lid, and run the "Stew" setting for 1 hour.

An hour later, the finished meatballs smell incredible!

Pile the meatballs onto a plate and spoon that delicious sauce over the top! Serve with sour cream.
