Cooking method
Peel the banana. Place the banana in a bowl and mash it with a blender until pureed. You can just mash a banana with a fork. Ripe soft bananas are best suited for this recipe.
Warm up the kefir a little (just don't boil it!) so that it is just warm or room temperature.
Break the eggs in a separate bowl and beat them with a whisk. Add banana puree and warm kefir to the eggs. Mix everything well. For sweetness, put liquid honey (you can replace it with sugar or maple syrup) and mix again.
Sift the flour into a bowl. It is best to take whole wheat flour for this recipe - so the pancakes will turn out to be dietary. And due to the fiber contained in whole-grain flour, it is also more useful.
In the middle of the sifted flour, make a small depression and pour in a mixture of banana, kefir and eggs. Beat everything thoroughly with a whisk until smooth. The dough should turn out to be runny, but thicker than pancakes. Leave the dough for 10 minutes so that it fits a little. So the pancakes will turn out to be more lush and airy in taste.
Pour a very little vegetable oil on a preheated frying pan, just to lubricate the surface of the dishes. You can simply lubricate the bottom of the pan with a brush with oil. Pour some of the dough into a frying pan and fry the pancakes over medium heat. As soon as the characteristic bubbles appear on its surface, turn it over to the other side with a spatula and fry until golden brown. Thus, fry all the pancakes for 1-2 minutes on each side.
Put the finished banana pancakes and flour on serving plates. Top with sliced banana slices, pour yogurt and liquid honey and serve.
