Oven-Roasted Vegetable Stew with Potatoes

Step 1:
How do you make oven-roasted vegetable stew with potatoes? Gather your ingredients. I used medium-sized vegetables. Feel free to round out the potatoes with any mix of vegetables you like, and adjust the proportions to taste. You can use a regular tomato instead of cherry tomatoes. Wash all the vegetables well.

Step 2:
Peel the onion and cut it into medium dice.

Wash and peel the carrot and cut it into medium dice as well.

Heat 2 tablespoons of olive oil in a skillet. Add the prepared onion and carrot and sauté over medium heat for 5–7 minutes.

Peel and wash the potatoes, then cut them into small cubes.

Add the potatoes to the pan with the other vegetables and stir. Fry until everything is about half cooked.

Trim the green stem end off the eggplant and cut it into small cubes.

Stem and seed the bell pepper and cut it into cubes as well.

Cut the zucchini into cubes the same way. If it's young, seedless, and thin-skinned, you can leave the skin on. If it's more mature, peel it and scoop out the seeds.

Add the prepared bell pepper and eggplant to the skillet and stir. Pour in the remaining olive oil. Cook over medium heat for 5 minutes, stirring occasionally.

Add the diced zucchini.

Season the vegetables with salt, sprinkle with fragrant herbs and spices to taste, and stir well.

Transfer the vegetables to a baking dish.

Arrange the cherry tomatoes on top, or a medium tomato cut into wedges. For a juicier stew, cover the dish with foil.

Roast the vegetable stew in an oven preheated to 350°F (180°C) for 25–30 minutes. Remove the foil for the last 10 minutes. Check the vegetables now and then — once they're soft, the stew is done. The timing may vary from what's given here, since it depends on how your particular oven runs.

- Note that you don't always need to draw the bitterness out of eggplant — young eggplants usually aren't bitter, and neither are certain special varieties.
