Bramboráky (Czech Potato Pancakes)

Tasty pan-fried potato pancakes. These Czech bramboráky are made from raw potato and bacon. They come together quickly and make a really filling dish. If you don't have bacon on hand, you can use pork tenderloin or pork belly instead. A little flour goes in to hold the pancakes together. Serve bramboráky as a main with sour cream — or just with a mug of beer.

  • How do you make Czech bramboráky?
    1. Cut the bacon into small cubes or thin strips. 2. Grate the peeled potatoes on the coarse side of a box grater. 3. Peel the onion and cut it into small dice, or chop it in a blender. 4. Combine the potatoes with the bacon, onion, and egg. Add salt, marjoram, and caraway seed. 5. Squeeze out the excess liquid, add the raw egg, and stir well. 6. Pour in the beer and mix until smooth. 7. Add the flour and stir. 8. Fry the bramboráky in vegetable oil on both sides until golden brown. Drain on a paper towel if you like. Serve warm alongside your main dishes. Enjoy!
