  • You could fairly call these a lighter treat, since they're made without any flour — and the health benefits of cottage cheese speak for themselves. You can fry them in hot oil or bake them in the oven; either way you'll get a tasty, tender dish that satisfies and lifts your mood. Start with a roomy bowl. Add the cottage cheese and mash it with a fork so it's more even — better yet, press it through a sieve, which makes it soft and smooth. The fat content of the cottage cheese doesn't matter here. Add the egg and sugar and mix well. Then add the starch, baking soda, and vanilla, and knead into a smooth dough. Heat a skillet until hot and add the oil. Spoon small portions of dough into the hot oil, shaping them into neat rounds (or squares). To keep the dough from sticking to the spoon, keep a glass of cold water nearby and dip the spoon before scooping each one. Fry over medium heat for 2–3 minutes per side, until golden and appetizing. Transfer the finished syrniki to paper towels to drain off the excess oil. Then arrange them on a platter and call everyone to the table — you can also plate them individually. Serve with berry sauce, sour cream, jam, or sweetened condensed milk. They're great with tea, coffee, or milk, and a few fresh berries on the side never hurt. Cook with joy — enjoy!
