- Anyone who's ever cooked fish knows the hardest part is the cleaning. With steaks you get to skip that step, since they're usually sold ready to cook. If not, clean the fish and cut it into steaks. Rinse the steaks and pat them thoroughly dry with paper towels. Lay all four in a roomy dish (they should all fit in a single layer). Drizzle the steaks with olive oil and season with salt and freshly ground black pepper. Toss with your hands so the fish is coated in oil and the seasoning is spread evenly. Preheat the grill, and once it's hot, brush the grates with a little olive oil — this makes it far easier to lift the steaks off without leaving half the fish behind. Set the steaks on the grates. Grill for 2–3 minutes, then rotate them 90 degrees (this gives you nice crosshatch grill marks instead of plain stripes — optional, of course). Cook another 2 minutes, then flip and grill the other side for 2–3 minutes. Rotate 90 degrees again and cook the salmon for another 1–2 minutes. That's it — the steaks are done! Gently lift them off with a spatula, taking care not to break them, and transfer them to a large platter. All that's left is to plate them up with a side dish, fresh herbs, or fresh vegetables.
