    1. Make a sponge starter. Combine the yeast, a little warm milk, a spoonful of sugar, and the salt. Add some of the measured flour and stir the sponge to the consistency of sour cream. Mix well and leave it to rise — this takes anywhere from 10 minutes to half an hour. The sponge is ready when the top has risen and just started to sink in the center. 2. Knead the dough. Add the rest of the warm milk, the sugar, and the sunflower oil to the sponge and mix well. Then add 4 cups (about 640 g) of flour in batches and knead a soft dough — it'll be sticky. Cover and let it rise until roughly doubled (about 40–70 minutes). Knead the risen dough on a floured surface and shape it into round bases for the pies. Roll them out with a rolling pin. 3. Fill the pies. Put a tablespoon of berries (no need to thaw them if frozen) and half a teaspoon of sugar on each round of dough (adjust to how sweet the berries are). Fold the round in half and pinch the edge to seal, then smooth it out. 4. Fry the pies in a hot, oiled skillet. Medium heat works best; flip them as needed as they cook. Set the finished pies on a paper towel to blot the excess oil. Enjoy!
